Ingredients
For the Strawberry Chia Pudding:
1 cup milk of your choice (whole milk, almond milk, or oat milk work great)
3 tablespoons chia seeds
ΒΌ cup fresh strawberries (blended or finely mashed)
1 tablespoon maple syrup, honey, or agave (adjust to taste)
Β½ teaspoon vanilla extract
For the “Cheesecake” Layers & Toppings:
2-3 tablespoons Greek yogurt or softened cream cheese (for that tangy cheesecake flavor)
ΒΌ cup fresh strawberries, chopped
2-3 Graham crackers, crushed
A dollop of whipped cream or extra Greek yogurt for the top
Step-by-Step Instructions
Mix the Pudding: In a jar or bowl, combine the milk, chia seeds, blended/mashed strawberries, sweetener, and vanilla extract. Stir well until everything is combined.
Let it Set: Wait about 5 minutes and give it another good stir to prevent the chia seeds from clumping at the bottom. Cover and place it in the fridge for at least 2 hours (overnight is best) until it thickens into a pudding texture.
Prep the Toppings: Crush your graham crackers into small chunks and chop up your fresh strawberries.
Assemble the Cups: Grab a glass and layer your dessert! You can either mix the Greek yogurt/cream cheese directly into the chia pudding for a creamy texture, or layer it. Layer the chia pudding, a spoonful of yogurt, crushed graham crackers, and chopped strawberries.
