1. Make flax egg (if using)
- Mix ground flaxseed with water.
- Let it sit for 5–10 minutes until gel-like.
2. Mash chickpeas
- Add chickpeas to a bowl or food processor.
- Mash until mostly broken down but still slightly chunky (don’t fully puree).
3. Mix ingredients
- Add garlic, onion, herbs, lemon zest, lemon juice, olive oil, spices, and optional Dijon/nutritional yeast.
- Stir well until evenly combined.
4. Add binder
- Mix in chickpea flour and flax egg.
- Combine until mixture holds together when pressed.
- If too wet, add a little more flour.
5. Shape the cakes
- Form into small patties (like burger or fritter size).
- Lightly press so they hold shape.
6. Cook until crispy
Pan-fry method (best for crispiness):
- Heat 2–3 tbsp olive oil in a skillet over medium heat.
