Vegan Lemon Garlic Chickpea Cakes

Crispy on the outside, soft on the inside, and packed with bright lemon-garlic flavor—these chickpea cakes are a high-protein vegan favorite perfect for lunch, dinner, or meal prep.


🧾 Ingredients

🧆 Chickpea cakes

  • 2 cans (400g each) chickpeas, drained & rinsed
  • 3–4 cloves garlic (minced)
  • ½ small onion (finely chopped)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp fresh dill or coriander (optional but recommended)
  • Zest of 1 lemon 🍋
  • 2 tbsp lemon juice
  • 3 tbsp olive oil (plus extra for cooking)
  • ½ tsp cumin powder
  • ½ tsp paprika
  • ½ tsp chili flakes (optional)
  • Salt & black pepper to taste

🌾 Binding ingredients

  • ½ cup chickpea flour (or all-purpose flour)
  • 2 tbsp ground flaxseed + 5 tbsp water (flax egg)
    or 1 regular egg if not vegan

🧄 Optional flavor boost

  • 2 tbsp nutritional yeast (for cheesy depth)
  • 1 tbsp Dijon mustard

🔥 Instructions

1. Make flax egg (if using)

  • Mix ground flaxseed with water.
  • Let it sit for 5–10 minutes until gel-like.

2. Mash chickpeas

  • Add chickpeas to a bowl or food processor.
  • Mash until mostly broken down but still slightly chunky (don’t fully puree).

3. Mix ingredients

  • Add garlic, onion, herbs, lemon zest, lemon juice, olive oil, spices, and optional Dijon/nutritional yeast.
  • Stir well until evenly combined.

4. Add binder

  • Mix in chickpea flour and flax egg.
  • Combine until mixture holds together when pressed.
  • If too wet, add a little more flour.

5. Shape the cakes

  • Form into small patties (like burger or fritter size).
  • Lightly press so they hold shape.

6. Cook until crispy

Pan-fry method (best for crispiness):

  • Heat 2–3 tbsp olive oil in a skillet over medium heat.
  • Cook patties 3–4 minutes per side until golden and crispy.

Air fryer method:

  • Lightly spray with oil.
  • Air fry at 190°C (375°F) for 10–12 minutes, flipping halfway.

Oven method:

  • Bake at 200°C (400°F) for 20–25 minutes, flipping once.
