  • 150–200 g (5–7 oz) vegan brie, sliced into thin pieces
  • ⅓ cup cranberry sauce or cranberry chutney
  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • 2 tbsp chopped walnuts or pecans (optional, for crunch)
  • 1 tbsp maple syrup (optional)
  • Freshly ground black pepper, to taste

For Garnish

  • Extra fresh thyme leaves
  • A small drizzle of balsamic glaze (optional)

👩‍🍳 Instructions

Step 1: Preheat the Oven

  • Preheat oven to 220°C (425°F).
  • Place a baking sheet or pizza stone in the oven while it heats for a crispier crust.

Step 2: Prepare the Pears

  1. Wash and dry the pear.
  2. Cut it in half and remove the core.
  3. Slice into very thin slices (about ⅛ inch thick).

Tip: Thin slices cook evenly and become slightly caramelized.

Step 3: Prepare the Flatbread Base

  1. Place the flatbread on a sheet of parchment paper.
  2. Brush the surface lightly with olive oil.
  3. Spread cranberry sauce evenly over the flatbread, leaving a small border around the edges.

Step 4: Add the Toppings

  1. Arrange pear slices over the cranberry layer in a slightly overlapping pattern.
  2. Scatter slices of vegan brie evenly across the flatbread.
  3. Sprinkle with thyme leaves.
  4. Add chopped walnuts or pecans if using.
  5. Season with a few grinds of black pepper.

Step 5: Bake

  1. Carefully transfer the flatbread (with parchment) onto the hot baking sheet or pizza stone.
  2. Bake for 12–18 minutes, until:
    • The edges are golden and crisp.
    • The vegan brie is softened and slightly melted.
    • The pears are tender.

Step 6: Finish and Garnish

  1. Remove from the oven.
  2. Drizzle lightly with maple syrup if you want a sweeter finish.
  3. Add a few extra thyme leaves.
  4. Drizzle with balsamic glaze if desired.
