This is a bright, crunchy, protein-rich salad made with creamy chickpeas, sweet dried cranberries, and toasted walnuts, all tossed in a fresh citrusy orange vinaigrette. It works great as a light lunch, side dish, or meal-prep salad.


🧾 Ingredients

For the salad

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • ½ cup dried cranberries
  • ½ cup walnuts, toasted and chopped
  • ½ small red onion, finely diced
  • 1 cup cucumber, diced (optional but refreshing)
  • 2 cups baby spinach or arugula (optional base greens)
  • 2 tbsp fresh parsley, chopped

For the orange vinaigrette

  • ¼ cup fresh orange juice
  • 1 tsp orange zest
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • ½ tsp salt
  • ¼ tsp black pepper

Step 1: Toast the walnuts

  1. Heat a dry pan over medium heat.
  2. Add walnuts and toast for 3–5 minutes, stirring frequently.
  3. Remove when fragrant and lightly golden.
  4. Let cool, then chop.

Step 2: Prepare the salad base

In a large bowl combine:

  • dried cranberries
  • Toasted walnuts
  • Red onion
  • Cucumber
  • Parsley

Toss gently.


Step 3: Make the orange vinaigrette

In a small bowl or jar, whisk together:

  • Olive oil
  • Apple cider vinegar
  • Dijon mustard
  • Honey or maple syrup
  • Salt and pepper

Shake or whisk until fully emulsified.
