1 cup egg white powder (about 100 g)
2 scoops unflavored whey protein isolate (about 60 g)
1½ cups water, room temperature
½ tsp salt (optional)

This recipe contains no flour, no sugar, and essentially zero carbohydrates.

8×4-inch loaf pan

Instructions
Step 1: Prepare the Pan
Preheat oven to 325°F (165°C).
Line loaf pan with parchment paper.
Step 2: Mix the Batter
Add water to a large mixing bowl.
Gradually add egg white powder while mixing.
Beat on high speed for 5–8 minutes until thick and fluffy.
Add whey protein isolate and salt.
Continue mixing until the batter resembles a thick meringue.
Step 3: Bake
Transfer batter to loaf pan.
Smooth the top with a spatula.
Bake for 30–40 minutes until golden and firm.
Step 4: Cool Properly
Turn off the oven.
Leave the bread inside for 10–15 minutes with the door slightly open.
Remove and cool completely on a rack before slicing.

Allowing it to cool slowly helps prevent collapsing.

For a richer bread that tastes more like traditional sandwich bread:

12 eggs
1½ cups cottage cheese
2 cups pork panko (ground pork rinds)
½ cup melted butter

Blend smooth and bake at 375°F (190°C) for about 1 hour. This version is still extremely low carb but higher in fat and calories.

Freezer: up to 3 months; freeze slices individually for easy use.
