🥞 Zero-Carb Oat Pancakes

Ingredients

  • ½ cup (110 g) cottage cheese, low-fat or full-fat
  • 2 large eggs
  • 2 tbsp (10 g) oat fiber — not oat flour
  • 1 tbsp (8 g) almond flour
  • 1 tsp baking powder
  • ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • 1–2 tsp granulated erythritol or allulose, to taste
  • ⅛ tsp salt
  • 1–2 tbsp unsweetened almond milk, only if needed
  • 1 tsp butter or coconut oil, for cooking

Directions

  1. Make the batter: Whisk cottage cheese, eggs, vanilla, sweetener, and cinnamon until mostly smooth.
  2. Add dry ingredients: Stir in oat fiber, almond flour, baking powder, and salt.
  3. Rest: Let the batter sit for 2 minutes so the oat fiber can absorb moisture. If it’s too thick, add almond milk 1 tablespoon at a time.
  4. Heat: Warm a nonstick skillet over medium-low heat and lightly grease it.
  5. Cook: Divide the batter into 4 small pancakes. Cook for 2–3 minutes on the first side.
  6. Flip: Turn when bubbles appear and the edges look set and slightly dry.
  7. Cook the second side for 1–2 minutes, until set and lightly browned.
  8. Serve immediately with Greek yogurt, sugar-free syrup, cinnamon, or a few berries. Don’t press down on the pancakes while cooking, as this can make them less fluffy.
