Ingredients
- ½ cup (110 g) cottage cheese, low-fat or full-fat
- 2 large eggs
- 2 tbsp (10 g) oat fiber — not oat flour
- 1 tbsp (8 g) almond flour
- 1 tsp baking powder
- ½ tsp vanilla extract
- ½ tsp ground cinnamon
- 1–2 tsp granulated erythritol or allulose, to taste
- ⅛ tsp salt
- 1–2 tbsp unsweetened almond milk, only if needed
- 1 tsp butter or coconut oil, for cooking
Directions
- Make the batter: Whisk cottage cheese, eggs, vanilla, sweetener, and cinnamon until mostly smooth.
- Add dry ingredients: Stir in oat fiber, almond flour, baking powder, and salt.
- Rest: Let the batter sit for 2 minutes so the oat fiber can absorb moisture. If it’s too thick, add almond milk 1 tablespoon at a time.
- Heat: Warm a nonstick skillet over medium-low heat and lightly grease it.
- Cook: Divide the batter into 4 small pancakes. Cook for 2–3 minutes on the first side.
- Flip: Turn when bubbles appear and the edges look set and slightly dry.
- Cook the second side for 1–2 minutes, until set and lightly browned.
- Serve immediately with Greek yogurt, sugar-free syrup, cinnamon, or a few berries. Don’t press down on the pancakes while cooking, as this can make them less fluffy.
