🍞 Zero-Carb Yogurt Bread

Ingredients

  • 1 cup (225 g) plain Greek yogurt, preferably thick and unsweetened
  • 2 large eggs
  • ½ cup (50 g) finely grated Parmesan cheese
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ tsp garlic powder, optional
  • 1 tbsp chopped fresh herbs, optional

Directions

  1. Preheat oven to 350°F (175°C). Line a small loaf pan or baking tray with parchment paper.
  2. Whisk eggs for about 30–45 seconds until smooth.
  3. Add yogurt and whisk until creamy and well combined.
  4. Add Parmesan and seasonings. Stir in Parmesan, baking powder, salt, and garlic powder if using.
  5. Mix gently with a spatula just until everything is incorporated. Don’t overmix.
  6. Transfer to the pan and spread into an even layer.
  7. Bake for 22–28 minutes, until lightly golden and the center feels firm.
  8. Test: A toothpick inserted in the center should come out mostly clean, without wet batter.
  9. Cool: Leave in the pan for 10 minutes, then transfer to a rack and cool completely for another 15–20 minutes.
  10. Slice into 6 portions. Toasting the slices is optional and gives the edges a little crispness.
