Ingredients
- 1 cup (225 g) plain Greek yogurt, preferably thick and unsweetened
- 2 large eggs
- ½ cup (50 g) finely grated Parmesan cheese
- ½ tsp baking powder
- ¼ tsp salt
- ¼ tsp garlic powder, optional
- 1 tbsp chopped fresh herbs, optional
Directions
- Preheat oven to 350°F (175°C). Line a small loaf pan or baking tray with parchment paper.
- Whisk eggs for about 30–45 seconds until smooth.
- Add yogurt and whisk until creamy and well combined.
- Add Parmesan and seasonings. Stir in Parmesan, baking powder, salt, and garlic powder if using.
- Mix gently with a spatula just until everything is incorporated. Don’t overmix.
- Transfer to the pan and spread into an even layer.
- Bake for 22–28 minutes, until lightly golden and the center feels firm.
- Test: A toothpick inserted in the center should come out mostly clean, without wet batter.
- Cool: Leave in the pan for 10 minutes, then transfer to a rack and cool completely for another 15–20 minutes.
- Slice into 6 portions. Toasting the slices is optional and gives the edges a little crispness.
