🎃🍪 3-Ingredient Pumpkin Cookies

Ingredients
- 1 box (15.25 oz / 432 g) spice cake mix
- 1 cup (about 240 g) pure pumpkin purée
- 1 tsp pumpkin pie spice
Method
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Mix the cake mix, pumpkin purée, and pumpkin spice until a thick, sticky batter forms. Don’t overmix.
- Scoop about 1½ tablespoons of batter per cookie onto the baking sheets, leaving about 2 inches between them.
- Gently smooth the tops with a damp spoon if desired.
- Bake for 10–12 minutes, until the edges are set and the tops no longer look wet.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
