🥬🍔 Oven-Baked Cabbage Burgers
Makes: 8 small burgers | Serves: 4 | Prep: 15 min | Bake: 25–30 min
Ingredients
- 4 cups finely shredded green cabbage
- 2 large eggs
- ¼ cup reduced-fat shredded mozzarella
- ¼ cup finely diced onion
- 2 tbsp whole-wheat flour
- 1 clove garlic, minced
- ½ tsp paprika
- ½ tsp Italian seasoning
- ¼ tsp black pepper
- ¼ tsp salt
- 1 tbsp fresh parsley, chopped
- 1 tsp olive oil or cooking spray
Optional garlic yogurt sauce
- ½ cup Greek yogurt
- 1 tsp lemon juice
- ¼ tsp garlic powder
- 1 tbsp chopped parsley
- Pinch of black pepper
Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
- Place shredded cabbage in a bowl, sprinkle lightly with salt, and let sit for 5 minutes. Squeeze out as much moisture as possible with a clean kitchen towel.
- Mix cabbage with eggs, mozzarella, onion, flour, garlic, paprika, Italian seasoning, pepper, and parsley.
- Divide into 8 portions and shape into compact patties about ½ inch thick.
- Place on the baking sheet and lightly brush or spray with oil.
- Bake for 15 minutes, then carefully flip.
- Bake another 10–12 minutes, until golden and cooked through. Broil for 1–2 minutes at the end for extra-crispy edges, if desired.
- Rest for 3–5 minutes before serving.
