Classic Vegan Coconut Shake

A rich, creamy vegan coconut shake made with coconut milk and dairy-free ingredients.

Ingredients (2 servings)

  • 1 cup full-fat coconut milk (well shaken)
  • 1 cup coconut ice cream (or dairy-free vanilla ice cream)
  • ½ cup ice cubes
  • 2 tablespoons maple syrup or agave syrup (adjust to taste)
  • ½ teaspoon vanilla extract
  • 2 tablespoons unsweetened shredded coconut (optional)
  • Pinch of salt

Optional Toppings

  • Toasted coconut flakes
  • Vegan whipped cream
  • A drizzle of maple syrup
  • Extra shredded coconut

Instructions

  1. Prepare ingredients
    • Chill the coconut milk beforehand for the best texture.
    • If using shredded coconut, lightly toast it in a dry pan for 2–3 minutes until golden.
  2. Blend
    • Add the coconut milk, coconut ice cream, ice cubes, maple syrup, vanilla extract, shredded coconut (if using), and salt to a blender.
    • Blend on high speed for 30–60 seconds until completely smooth and creamy.
  3. Taste and adjust
    • For a sweeter shake, add more maple syrup.
    • For a thicker shake, add extra ice cream.
    • For a thinner shake, add a splash of coconut milk.
  4. Serve
    • Pour into chilled glasses.
    • Top with toasted coconut flakes, vegan whipped cream, or a drizzle of syrup if desired.
    • Serve immediately.

Tips

  • For an extra tropical flavor, add ¼ cup frozen pineapple or mango.
  • For a chocolate-coconut version, blend in 1 tablespoon cocoa powder.
  • For a protein boost, add 1 scoop of your favorite vegan vanilla protein powder.
  • Freeze coconut milk in ice cube trays and use those instead of regular ice for an even creamier shake.
