Ingredients
- 1½ cups almond flour
- ½ cup whey protein isolate (unflavored or plain)
- 2 tbsp psyllium husk powder
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup shredded mozzarella cheese
- 2 oz (60 g) cream cheese
- 2 large eggs
- 2 egg whites
- 2 tbsp melted butter
For Brushing
- 1 tbsp melted butter
- Optional: sesame seeds, poppy seeds, or garlic powder
Instructions
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- In a large bowl, mix almond flour, protein powder, psyllium husk, baking powder, and salt.
- In a microwave-safe bowl, combine mozzarella and cream cheese. Heat in 30-second intervals until melted and smooth.
- Add the melted cheese mixture, eggs, egg whites, and butter to the dry ingredients.
- Mix until a soft dough forms. If sticky, let it sit for 2–3 minutes.
- Divide into 8 equal portions and shape into rolls.
- Place on the baking sheet and brush with melted butter.
- Sprinkle with seeds if desired.
- Bake for 18–22 minutes, until golden brown.
- Brush with a little more butter immediately after baking.
