Strawberry Cheesecake Wonton bites

Instead of traditional wonton wrappers (which are high in carbs), this recipe uses a protein-rich, low-carb dough to create crispy, cheesecake-filled bites with fresh strawberries.

Ingredients

Protein Dough

  • 1½ cups (150 g) shredded part-skim mozzarella
  • 2 oz (56 g) cream cheese
  • 1 cup (100 g) almond flour
  • ¼ cup (25 g) unflavored whey protein isolate
  • 1 large egg
  • ½ tsp baking powder

Cheesecake Filling

  • 8 oz (225 g) reduced-fat cream cheese, softened
  • ¼ cup (60 g) blended cottage cheese
  • 1 scoop (30 g) vanilla whey protein isolate
  • 2–3 tbsp powdered monk fruit sweetener
  • 1 tsp vanilla extract
  • ½ tsp lemon zest (optional)

Strawberry Filling

  • ½ cup (75 g) finely diced fresh strawberries
  • 1 tsp chia seeds (optional, to absorb excess moisture)

Topping

  • 1 tbsp melted butter
  • Powdered monk fruit sweetener for dusting (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the dough:
    • Microwave the mozzarella and cream cheese together for 60–90 seconds until melted.
    • Stir until smooth, then mix in the egg.
    • Add the almond flour, whey protein isolate, and baking powder. Knead until a soft dough forms.
  3. Place the dough between two sheets of parchment paper and roll it to about ⅛ inch (3 mm) thick.
  4. Cut into 12 equal squares.
  5. In a bowl, beat together the cream cheese, blended cottage cheese, vanilla protein powder, sweetener, vanilla, and lemon zest until smooth.
  6. Fold the diced strawberries into the filling. If they’re very juicy, stir in the chia seeds and let the mixture sit for 5 minutes.
  7. Spoon about 1 tablespoon of filling into the center of each dough square.
  8. Fold each square into a triangle or bring the corners together to form a pouch. Press the edges firmly to seal.
  9. Brush the tops with melted butter.
  10. Bake for 12–15 minutes, or until lightly golden.
  11. Cool for at least 10 minutes before serving, as the filling will be hot.
