These no-bake brownie bites are rich, fudgy, naturally sugar-free, and packed with protein. They’re perfect for meal prep, post-workout snacks, or a healthier dessert.

Ingredients

  • 1 cup (225 g) full-fat cottage cheese
  • 1 scoop (30 g) chocolate whey protein isolate
  • ½ cup (50 g) almond flour
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp powdered peanut butter (optional, for extra protein)
  • 2 tbsp granulated monk fruit or erythritol sweetener (adjust to taste)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tbsp sugar-free chocolate chips, finely chopped
  • 1–2 tbsp unsweetened almond milk (only if needed)

Optional Coating

  • Unsweetened cocoa powder
  • Finely chopped roasted almonds or pecans
  • Unsweetened shredded coconut

Instructions

  1. Blend the cottage cheese in a food processor or blender until completely smooth.
  2. Add the chocolate protein powder, almond flour, cocoa powder, powdered peanut butter, sweetener, vanilla, and salt. Blend until a thick brownie batter forms.
  3. If the mixture is too thick, add almond milk 1 tablespoon at a time until it reaches a scoopable consistency.
  4. Fold in the chopped sugar-free chocolate chips.
  5. Refrigerate the mixture for 20–30 minutes to firm up.
  6. Scoop about 1 tablespoon of the mixture and roll into balls.
  7. Roll in cocoa powder, chopped nuts, or shredded coconut if desired.
  8. Store in an airtight container in the refrigerator.
