Dough
- 1½ cups (150 g) shredded mozzarella cheese
- 2 oz (56 g) cream cheese
- 1 cup (100 g) almond flour
- ½ cup (50 g) unflavored whey protein isolate
- 1 tsp baking powder
- 1 large egg
Filling
- 8 oz (225 g) lean breakfast sausage or turkey sausage
- 4 oz (113 g) cream cheese, softened
- ½ cup (50 g) shredded cheddar cheese
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika (optional)
- Salt and black pepper, to taste
- 1 tbsp chopped parsley (optional)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Cook the sausage in a skillet over medium heat until browned. Drain any excess fat and let it cool slightly.
- Prepare the dough:
- Microwave the mozzarella and cream cheese together for 60–90 seconds, stirring until smooth.
- Mix in the egg.
- Add the almond flour, whey protein isolate, and baking powder. Stir until a soft dough forms.
- Place the dough between two sheets of parchment paper and roll it into a rectangle about 10 × 12 inches (25 × 30 cm).
- Mix the cooked sausage with the softened cream cheese, cheddar cheese, garlic powder, onion powder, paprika, and parsley.
- Spread the filling evenly over the dough, leaving about a ½-inch (1 cm) border.
- Roll the dough tightly into a log, starting from the long side.
- Chill the log for 10–15 minutes to make slicing easier.
- Slice into 12 equal pinwheels and place them cut-side up on the prepared baking sheet.
- Bake for 18–20 minutes, or until golden brown.
- Let cool for 5 minutes before serving.
