Ingredients

Dough

  • 1½ cups (150 g) shredded mozzarella cheese
  • 2 oz (56 g) cream cheese
  • 1 cup (100 g) almond flour
  • ½ cup (50 g) unflavored whey protein isolate
  • 1 tsp baking powder
  • 1 large egg

Filling

  • 8 oz (225 g) lean breakfast sausage or turkey sausage
  • 4 oz (113 g) cream cheese, softened
  • ½ cup (50 g) shredded cheddar cheese
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika (optional)
  • Salt and black pepper, to taste
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cook the sausage in a skillet over medium heat until browned. Drain any excess fat and let it cool slightly.
  3. Prepare the dough:
    • Microwave the mozzarella and cream cheese together for 60–90 seconds, stirring until smooth.
    • Mix in the egg.
    • Add the almond flour, whey protein isolate, and baking powder. Stir until a soft dough forms.
  4. Place the dough between two sheets of parchment paper and roll it into a rectangle about 10 × 12 inches (25 × 30 cm).
  5. Mix the cooked sausage with the softened cream cheese, cheddar cheese, garlic powder, onion powder, paprika, and parsley.
  6. Spread the filling evenly over the dough, leaving about a ½-inch (1 cm) border.
  7. Roll the dough tightly into a log, starting from the long side.
  8. Chill the log for 10–15 minutes to make slicing easier.
  9. Slice into 12 equal pinwheels and place them cut-side up on the prepared baking sheet.
  10. Bake for 18–20 minutes, or until golden brown.
  11. Let cool for 5 minutes before serving.
