Fluffy Southern Buttermilk Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs, room temperature
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Cooking spray or a little butter for greasing

Instructions

1. Prepare the Batter

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. A few lumps are okay—do not overmix.
  • Let the batter rest for 5–10 minutes for extra fluffy pancakes.

2. Prepare the Air Fryer

  • Preheat the air fryer to 350°F (175°C) for 3 minutes.
  • Grease a small air fryer-safe cake pan, silicone mold, or parchment liner with cooking spray or butter.

3. Air Fry the Pancakes

  • Pour a small amount of batter into the pan (about ¼ cup per pancake), leaving space for spreading.
  • Air fry at 350°F (175°C) for 6–8 minutes, or until the pancakes are golden and cooked through.
  • Repeat with the remaining batter.

4. Serve

  • Stack the warm pancakes and top with butter and maple syrup.
  • Add fresh berries, whipped cream, powdered sugar, or honey if desired.

Tip: For extra fluffy Southern-style pancakes, avoid pressing down the batter and allow the air fryer heat to gently cook them.
