Ingredients
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups buttermilk
- 2 large eggs, room temperature
- ¼ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- Cooking spray or a little butter for greasing
Instructions
1. Prepare the Batter
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. A few lumps are okay—do not overmix.
- Let the batter rest for 5–10 minutes for extra fluffy pancakes.
2. Prepare the Air Fryer
- Preheat the air fryer to 350°F (175°C) for 3 minutes.
- Grease a small air fryer-safe cake pan, silicone mold, or parchment liner with cooking spray or butter.
3. Air Fry the Pancakes
- Pour a small amount of batter into the pan (about ¼ cup per pancake), leaving space for spreading.
- Air fry at 350°F (175°C) for 6–8 minutes, or until the pancakes are golden and cooked through.
- Repeat with the remaining batter.
4. Serve
- Stack the warm pancakes and top with butter and maple syrup.
- Add fresh berries, whipped cream, powdered sugar, or honey if desired.
Tip: For extra fluffy Southern-style pancakes, avoid pressing down the batter and allow the air fryer heat to gently cook them.
