Bang Bang Chicken Fried Rice

Ingredients (Serves 4)

For the chicken:

  • 1 lb (450 g) chicken breast, cubed
  • 1 tbsp cornstarch
  • Salt and pepper
  • 1 tbsp oil

For the fried rice:

  • 4 cups cold cooked jasmine rice
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots
  • 3 cloves garlic, minced
  • 2 green onions, sliced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil

Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1–2 tbsp sriracha (adjust to taste)
  • 1 tsp honey (optional)

Directions

  1. Mix the sauce ingredients and set aside.
  2. Toss the chicken with cornstarch, salt, and pepper. Cook in a skillet until golden and cooked through.
  3. Stir half the bang bang sauce into the cooked chicken.
  4. Scramble the eggs in a large pan, then add garlic and vegetables.
  5. Stir in the cold rice, soy sauce, and sesame oil. Cook until hot and lightly crisped.
  6. Fold in the green onions.
  7. Serve the fried rice topped with the bang bang chicken and drizzle with the remaining sauce.

Tips:

  • Cold, day-old rice gives the best fried rice texture.
  • Add edamame, bell peppers, or broccoli for extra vegetables.
  • Garnish with sesame seeds and extra green onions for added flavor and crunch.
