Ingredients (Serves 4)
For the chicken:
- 1 lb (450 g) chicken breast, cubed
- 1 tbsp cornstarch
- Salt and pepper
- 1 tbsp oil
For the fried rice:
- 4 cups cold cooked jasmine rice
- 2 eggs, beaten
- 1 cup frozen peas and carrots
- 3 cloves garlic, minced
- 2 green onions, sliced
- 2 tbsp soy sauce
- 1 tsp sesame oil
Bang Bang Sauce:
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1–2 tbsp sriracha (adjust to taste)
- 1 tsp honey (optional)
Directions
- Mix the sauce ingredients and set aside.
- Toss the chicken with cornstarch, salt, and pepper. Cook in a skillet until golden and cooked through.
- Stir half the bang bang sauce into the cooked chicken.
- Scramble the eggs in a large pan, then add garlic and vegetables.
- Stir in the cold rice, soy sauce, and sesame oil. Cook until hot and lightly crisped.
- Fold in the green onions.
- Serve the fried rice topped with the bang bang chicken and drizzle with the remaining sauce.
Tips:
- Cold, day-old rice gives the best fried rice texture.
- Add edamame, bell peppers, or broccoli for extra vegetables.
- Garnish with sesame seeds and extra green onions for added flavor and crunch.
