Air fryer Christmas cake

Ingredients

  • 150 g butter, softened
  • 150 g caster sugar
  • 4 large eggs
  • 200 g all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon mixed spice
  • ½ teaspoon cinnamon
  • 250 g mixed dried fruit
  • 50 g chopped nuts (optional)
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 2 tablespoons orange juice

Instructions

  1. Soak the dried fruit in the orange juice for 20–30 minutes.
  2. In a large bowl, beat the softened butter and caster sugar until light and creamy.
  3. Add the eggs one at a time, mixing well after each egg.
  4. Add the vanilla extract.
  5. In another bowl, mix the flour, baking powder, mixed spice, and cinnamon.
  6. Slowly add the dry ingredients to the butter mixture. Add the milk and mix gently.
  7. Fold in the soaked dried fruit and chopped nuts.
  8. Grease a 7-inch (18 cm) cake pan that fits inside your air fryer. Line the bottom with baking paper.
  9. Pour the cake batter into the pan and smooth the top.
  10. Preheat the air fryer to 300°F (150°C) for 3 minutes.
  11. Place the cake pan in the air fryer and cook at 300°F (150°C) for 45–55 minutes.
  12. Check the cake with a toothpick. If it comes out clean, the cake is done.
  13. If the top becomes dark too quickly, loosely cover it with foil and continue cooking.
  14. Let the cake cool in the pan for 10–15 minutes, then remove it and cool completely.

Tip

Christmas cake tastes even better after resting for a day or two. Store it in an airtight container once completely cooled.
