Ingredients
- 150 g butter, softened
- 150 g caster sugar
- 4 large eggs
- 200 g all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon mixed spice
- ½ teaspoon cinnamon
- 250 g mixed dried fruit
- 50 g chopped nuts (optional)
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 2 tablespoons orange juice
Instructions
- Soak the dried fruit in the orange juice for 20–30 minutes.
- In a large bowl, beat the softened butter and caster sugar until light and creamy.
- Add the eggs one at a time, mixing well after each egg.
- Add the vanilla extract.
- In another bowl, mix the flour, baking powder, mixed spice, and cinnamon.
- Slowly add the dry ingredients to the butter mixture. Add the milk and mix gently.
- Fold in the soaked dried fruit and chopped nuts.
- Grease a 7-inch (18 cm) cake pan that fits inside your air fryer. Line the bottom with baking paper.
- Pour the cake batter into the pan and smooth the top.
- Preheat the air fryer to 300°F (150°C) for 3 minutes.
- Place the cake pan in the air fryer and cook at 300°F (150°C) for 45–55 minutes.
- Check the cake with a toothpick. If it comes out clean, the cake is done.
- If the top becomes dark too quickly, loosely cover it with foil and continue cooking.
- Let the cake cool in the pan for 10–15 minutes, then remove it and cool completely.
Tip
Christmas cake tastes even better after resting for a day or two. Store it in an airtight container once completely cooled.
