Makes: 8 small burgers | Serves: 4 | Prep: 15 min | Bake: 25–30 min

Ingredients

  • 4 cups finely shredded green cabbage
  • 2 large eggs
  • ΒΌ cup reduced-fat shredded mozzarella
  • ΒΌ cup finely diced onion
  • 2 tbsp whole-wheat flour
  • 1 clove garlic, minced
  • Β½ tsp paprika
  • Β½ tsp Italian seasoning
  • ΒΌ tsp black pepper
  • ΒΌ tsp salt
  • 1 tbsp fresh parsley, chopped
  • 1 tsp olive oil or cooking spray

Optional garlic yogurt sauce

  • Β½ cup Greek yogurt
  • 1 tsp lemon juice
  • ΒΌ tsp garlic powder
  • 1 tbsp chopped parsley
  • Pinch of black pepper

Method

  1. Preheat oven to 400Β°F (200Β°C) and line a baking sheet with parchment.
  2. Place shredded cabbage in a bowl, sprinkle lightly with salt, and let sit for 5 minutes. Squeeze out as much moisture as possible with a clean kitchen towel.
  3. Mix cabbage with eggs, mozzarella, onion, flour, garlic, paprika, Italian seasoning, pepper, and parsley.
  4. Divide into 8 portions and shape into compact patties about Β½ inch thick.
  5. Place on the baking sheet and lightly brush or spray with oil.
  6. Bake for 15 minutes, then carefully flip.
  7. Bake another 10–12 minutes, until golden and cooked through. Broil for 1–2 minutes at the end for extra-crispy edges, if desired.
  8. Rest for 3–5 minutes before serving.
