Ingredients
- 2 cups cooked boneless, skinless chicken breast, shredded or diced
- 2 cups cooked white or brown rice
- 3 cups broccoli florets, steamed
- 1 can (10.5 oz) 98% fat-free cream of chicken soup
- 1/2 cup fat-free Greek yogurt
- 1/2 cup low-fat milk
- 1 cup reduced-fat shredded cheddar cheese, divided
- 1/2 small onion, finely diced
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp black pepper
- Salt, to taste
- 2 tbsp grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C) and lightly spray a 9×13-inch baking dish with cooking spray.
- Steam the broccoli until just tender. Avoid overcooking because it will continue cooking in the oven.
- In a large bowl, whisk together the cream of chicken soup, Greek yogurt, milk, garlic powder, onion powder, paprika, and black pepper.
- Add the cooked chicken, rice, broccoli, and diced onion.
- Stir gently until everything is evenly coated.
- Fold in 3/4 cup of the shredded cheddar cheese.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Sprinkle the remaining 1/4 cup cheddar and Parmesan over the top.
- Bake uncovered for 25–30 minutes, until hot and bubbly and the cheese is melted.
- Let it rest for 5 minutes before serving.
