Ingredients

  • 2 cups cooked boneless, skinless chicken breast, shredded or diced
  • 2 cups cooked white or brown rice
  • 3 cups broccoli florets, steamed
  • 1 can (10.5 oz) 98% fat-free cream of chicken soup
  • 1/2 cup fat-free Greek yogurt
  • 1/2 cup low-fat milk
  • 1 cup reduced-fat shredded cheddar cheese, divided
  • 1/2 small onion, finely diced
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • Salt, to taste
  • 2 tbsp grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly spray a 9×13-inch baking dish with cooking spray.
  2. Steam the broccoli until just tender. Avoid overcooking because it will continue cooking in the oven.
  3. In a large bowl, whisk together the cream of chicken soup, Greek yogurt, milk, garlic powder, onion powder, paprika, and black pepper.
  4. Add the cooked chicken, rice, broccoli, and diced onion.
  5. Stir gently until everything is evenly coated.
  6. Fold in 3/4 cup of the shredded cheddar cheese.
  7. Transfer the mixture to the prepared baking dish and spread evenly.
  8. Sprinkle the remaining 1/4 cup cheddar and Parmesan over the top.
  9. Bake uncovered for 25–30 minutes, until hot and bubbly and the cheese is melted.
  10. Let it rest for 5 minutes before serving.
