Air Fryer Stuffed Bell Pepper Boats

Ingredients

  • 3 large bell peppers (any color), halved lengthwise and seeds removed
  • 1 lb (450 g) ground beef, turkey, or chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 cup marinara or tomato sauce
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp black pepper
  • Salt, to taste
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh parsley or basil, chopped (for garnish)
  • Cooking oil spray

Instructions

  1. Prepare the Filling
    • In a skillet over medium heat, cook the ground meat until browned.
    • Add the onion and garlic, and cook for 2–3 minutes until softened.
    • Stir in the cooked rice, marinara sauce, Italian seasoning, paprika, salt, and pepper. Cook for another 2 minutes, then remove from the heat.
  2. Prepare the Peppers
    • Lightly spray the bell pepper halves with cooking oil.
    • Fill each pepper half with the meat and rice mixture.
    • Top with mozzarella and Parmesan cheese.
  3. Preheat the Air Fryer
    • Preheat the air fryer to 360°F (180°C) for 3–5 minutes.
  4. Air Fry
    • Arrange the stuffed peppers in a single layer in the air fryer basket.
    • Air fry at 360°F (180°C) for 12–15 minutes, or until the peppers are tender and the cheese is melted and golden.
  5. Serve
    • Garnish with chopped parsley or basil.
    • Serve hot with a fresh salad, garlic bread, or roasted vegetables.
