Bang Bang Chicken Fried Rice

Ingredients

For the Chicken:

  • 1 ½ lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp vegetable oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp cornstarch (for light crispiness)

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1-2 tbsp sriracha (adjust to your heat preference)
  • 1 tbsp honey

For the Fried Rice:

  • 3 cups cooked Jasmine or long-grain white rice (day-old, cold rice works best)
  • 1 tbsp vegetable oil
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots, thawed
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 3-4 green onions, chopped

Instructions

1. Make the Bang Bang Sauce

  1. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey until smooth. Set aside.

2. Cook the Chicken

  1. Toss the cubed chicken breast with 1 tbsp vegetable oil, paprika, garlic powder, salt, pepper, and cornstarch until evenly coated.
  2. Heat a large skillet or wok over medium-high heat. Add the chicken and cook for 6–8 minutes, turning occasionally, until golden brown and cooked through.
  3. Remove the chicken from the pan and toss it in a bowl with about half of the prepared Bang Bang sauce. Set the remaining sauce aside for drizzling.

3. Cook the Rice & Veggies

  1. In the same skillet/wok over medium-high heat, add 1 tbsp vegetable oil.
  2. Push the oil to one side of the pan, pour in the beaten eggs, and scramble quickly for 1–2 minutes until set.
  3. Add the minced garlic, peas, and carrots. Sauté for 2 minutes until fragrant.
  4. Add the cold cooked rice, breaking up any clumps with your spatula.
  5. Drizzle the soy sauce and sesame oil over the rice. Stir-fry everything continuously for 3–4 minutes until the rice is hot and evenly seasoned.

4. Combine & Serve

  1. Stir the sauce-coated chicken into the fried rice until warmed through.
  2. Remove from heat and stir in the chopped green onions.
  3. Serve warm, drizzled with the remaining Bang Bang sauce on top!
