Salisbury Steak with Onion Mushroom Gravy

Ingredients

For the Steaks:

  • 1 lb (450g) ground beef (preferably 80/20 or 90% lean)
  • 1 large egg
  • ¼ cup breadcrumbs (plain or Panko)
  • ¼ cup yellow onion, finely minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil or butter (for searing)

For the Mushroom & Onion Gravy:

  • 1 small yellow onion, sliced into thin half-moons
  • 1 cup fresh mushrooms (cremini or button), sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme (or fresh thyme leaves)
  • Salt and black pepper, to taste

Instructions

1. Prepare the Beef Patties

  1. In a medium mixing bowl, combine the ground beef, egg, breadcrumbs, minced onion, salt, and black pepper.
  2. Mix gently with your hands just until combined (avoid over-mixing so the patties stay tender).
  3. Divide the mixture into 4 equal portions and shape them into oval-shaped patties, about ½-inch thick.

2. Sear the Patties

  1. Heat olive oil (or butter) in a large skillet over medium-high heat.
  2. Add the patties and sear for 3–4 minutes per side until a nice golden brown crust forms. (They don’t need to be completely cooked through inside yet).
  3. Transfer the patties to a plate and set aside.

3. Make the Mushroom & Onion Gravy

  1. In the same skillet over medium heat, add the sliced onions and mushrooms (add a small pat of butter if the skillet is dry).
  2. Sauté for 5–7 minutes until the vegetables are soft and lightly browned.
  3. Sprinkle the 2 tablespoons of flour over the mushrooms and onions, stirring constantly for 1 minute to cook out the raw flour taste.
  4. Slowly pour in the beef broth while whisking continuously to smooth out any lumps.
  5. Stir in the Worcestershire sauce and thyme. Bring the liquid to a simmer, stirring until it begins to thicken.

4. Simmer & Serve

  1. Return the seared beef patties (and any rested juices on the plate) back into the simmering gravy.
  2. Reduce the heat to low, cover the skillet, and simmer for 8–10 minutes until the patties are cooked through and tender, and the gravy is rich and thick.
  3. Taste the gravy and adjust salt and pepper if needed.
  4. Spoon the warm gravy and mushrooms over the patties and serve hot alongside mashed potatoes!
