Creamy Chicken Mushroom Wild Rice Soup

Ingredients
For the Soup:
- 1 cup uncooked wild rice (or wild rice blend), rinsed
- 1 lb (450g) chicken breast, diced into bite-sized pieces
- 2 cups (200g) fresh mushrooms (cremini or button), sliced
- 2 tbsp olive oil or butter
- 1 medium yellow onion, diced
- 2 large carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp Italian seasoning (or fresh thyme and rosemary)
- Salt and fresh black pepper, to taste
For the Creamy Base:
- ¼ cup unsalted butter
- ¼ cup all-purpose flour
- 1 cup heavy cream (or whole milk)
- 2 tbsp fresh parsley, finely chopped (for garnish)
Instructions
1. Cook the Base & Vegetables
- Heat the olive oil (or butter) in a large Dutch oven or soup pot over medium heat.
- Add the diced onion, carrots, and celery. Cook for 5 minutes until softened.
- Add the sliced mushrooms and minced garlic. Sauté for another 4–5 minutes until the mushrooms brown and release their moisture.
2. Simmer the Soup
- Add the diced chicken breast, rinsed wild rice, Italian seasoning, salt, and pepper into the pot.
- Pour in the chicken broth and stir well to combine.
