Cheese banana bread recipe

This banana bread is moist, naturally sweetened with ripe bananas, and higher in protein thanks to cottage cheese.

Makes: 10 slices

Per slice (approx.):

Ingredients

  • 1 cup (225 g) cottage cheese
  • 2 ripe medium bananas, mashed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups oat flour (or blended rolled oats)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • Optional: 2–3 tbsp maple syrup or honey (if you prefer it sweeter)
  • Optional: ¼ cup chopped walnuts or dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line an 8×4-inch loaf pan.
  2. Blend the cottage cheese until smooth.
  3. In a large bowl, whisk together the blended cottage cheese, mashed bananas, eggs, vanilla, and maple syrup (if using).
  4. Stir in the oat flour, baking powder, baking soda, cinnamon, and salt until just combined.
  5. Fold in the walnuts or chocolate chips, if using.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

For Even More Protein

  • Add 1 scoop (25–30 g) vanilla protein powder and reduce the oat flour by about ¼ cup.
  • Spread slices with Greek yogurt or natural peanut butter for an extra protein boost.

Storage

  • Refrigerate for up to 5 days.
  • Freeze individual slices for up to 3 months and thaw as needed.
