Tender cheese tortellini tossed with juicy steak, sautéed peppers and onions, and coated in a rich, creamy Provolone cheese sauce.

Ingredients
For the Tortellini
- 1 lb (450 g) cheese tortellini (fresh or frozen)
- 1 tbsp olive oil
For the Cheesesteak
- 1 lb (450 g) sirloin steak or shaved beef, thinly sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp Worcestershire sauce
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
For the Rich Provolone Sauce
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1½ cups milk
- 1 cup shredded Provolone cheese
- ¼ cup grated Parmesan cheese
- ½ tsp garlic powder
- ¼ tsp black pepper
Instructions
Step 1: Cook the Tortellini
Cook the tortellini according to the package directions. Drain, toss with 1 tablespoon olive oil, and set aside.
Step 2: Air Fry the Cheesesteak Mixture
- In a bowl, combine the steak, bell pepper, onion, garlic, olive oil, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper.
- Preheat the air fryer to 200°C (390°F) for 3 minutes.
- Place the mixture in the air fryer basket in a single layer.
Air Fry:
- 200°C (390°F) for 10–12 minutes
- Shake or stir halfway through cooking.
Step 3: Make the Provolone Sauce
- In a saucepan over medium heat, melt the butter.
- Whisk in the flour and cook for 1 minute.
- Gradually whisk in the milk until smooth.
- Simmer for 2–3 minutes, stirring frequently.
- Add the Provolone, Parmesan, garlic powder, and black pepper.
- Stir until the cheese is melted and the sauce is smooth.
Step 4: Combine
- Add the cooked tortellini to the cheesesteak mixture.
- Pour the warm Provolone sauce over the top.
- Toss gently until everything is evenly coated.
Step 5: Optional Air Fry Finish
For a golden, bubbly top:
- Transfer the mixture to an air fryer-safe baking dish.
- Sprinkle with extra shredded Provolone.
Air Fry:
- 180°C (350°F) for 3–5 minutes, until the cheese is melted and lightly browned.
Serve
Garnish with chopped parsley and serve hot with garlic bread or a fresh green salad.
