Golden, flaky puff pastry filled with savory ham and melted cheese—perfect for breakfast, lunch, or a quick snack.

Servings: 4 (8 pockets)
Prep Time: 15 minutes
Air Fry Time: 10–12 minutes

Ingredients

  • 1 sheet puff pastry (about 250 g), thawed
  • 150 g (5 oz) ham, thinly sliced or diced
  • 150 g (5 oz) cheddar, mozzarella, or Gruyère cheese, grated
  • 1 large egg, beaten (for egg wash)
  • 1 tsp Dijon mustard (optional)
  • ½ tsp garlic powder (optional)
  • ½ tsp dried parsley or Italian seasoning (optional)
  • Cooking spray or a little oil

Instructions

Step 1: Prepare the Pastry

  1. Preheat the air fryer to 180°C (350°F) for 3 minutes.
  2. Lightly flour a work surface and unfold the puff pastry.
  3. Cut it into 8 equal rectangles or squares.

Step 2: Add the Filling

  1. Spread a thin layer of Dijon mustard on one half of each pastry (optional).
  2. Add a layer of ham.
  3. Top with the grated cheese.
  4. Sprinkle with garlic powder or dried parsley if desired.

Step 3: Seal the Pockets

  1. Fold each pastry over the filling to form a pocket.
  2. Press the edges firmly with a fork to seal.
  3. Brush the tops with the beaten egg.
  4. Cut 2 small slits on top of each pocket to allow steam to escape.

Step 4: Air Fry

  1. Lightly spray the air fryer basket with cooking spray.
  2. Arrange the pastry pockets in a single layer, leaving space between them.

Air Fry:

  • 180°C (350°F) for 10–12 minutes
  • Flip carefully after 6 minutes if your air fryer browns unevenly.
  • Cook until the pastry is puffed and deep golden brown.

Step 5: Serve

Let the pockets cool for 3–5 minutes before serving, as the filling will be very hot.

Optional Dipping Sauces

  • Honey mustard
  • Ranch dressing
  • Garlic aioli
  • Marinara sauce
  • Spicy mayo
