Ingredients

Mug Cookie Batter

  • 2 tbsp (14 g) almond flour
  • 1 tbsp (10 g) coconut flour
  • 1 scoop (30 g) vanilla whey protein isolate
  • 1 tbsp powdered monk fruit or erythritol sweetener
  • ¼ tsp baking powder
  • Pinch of salt
  • 1 tbsp unsalted butter, melted
  • 1 large egg yolk
  • 1 tbsp unsweetened almond milk (add more if needed)
  • ½ tsp vanilla extract
  • 2 tbsp sugar-free chocolate chips

Optional Add-Ins

  • 1 tbsp chopped walnuts or pecans
  • Pinch of cinnamon
  • Flaky sea salt on top

Instructions

  1. In a microwave-safe mug or ramekin, combine:
    • Almond flour
    • Coconut flour
    • Protein powder
    • Sweetener
    • Baking powder
    • Salt
  2. Add melted butter, egg yolk, almond milk, and vanilla. Mix until a thick cookie dough forms.
  3. Fold in sugar-free chocolate chips and nuts (if using).
  4. Microwave for 45–60 seconds until the top is set but the center remains slightly soft.
  5. Let cool for 1–2 minutes before eating—the texture improves as it rests.
  6. Add a sprinkle of flaky salt or extra chocolate chips if desired.
