Cinnamon Baked Bananas with Pecans & Ice Cream

Ingredients

  • 2 large ripe bananas (peels on, sliced lengthwise into halves)
  • 1 tbsp unsalted butter, melted
  • 1 tbsp brown sugar or coconut sugar
  • 1/2 tsp ground cinnamon
  • Pinch of sea salt
  • 1/4 cup pecans, coarsely chopped
  • Vanilla ice cream or Greek yogurt (for serving)

Instructions

  1. Prep the Oven: Preheat your oven to 400°F (200°C) or prepare an air fryer set to 380°F (190°C). Line a baking sheet with parchment paper.
  2. Slice Bananas: Cut the bananas in half lengthwise, keeping the peel on to act as a boat (or peel completely if preferred). Place them cut-side up on the baking sheet.
  3. Season: In a small dish, mix together the melted butter, brown sugar, ground cinnamon, and a pinch of sea salt. Brush the mixture generously over the cut surface of each banana half.
  4. Bake: Bake for 12 to 15 minutes (or air-fry for 8–10 minutes) until the bananas are soft, caramelized, and bubbling around the edges.
  5. Garnish & Serve: Transfer the hot banana halves to a plate. Sprinkle with chopped pecans and serve immediately with a scoop of cold vanilla ice cream.
