Cream Cheese Pecan Cookies

Ingredients

  • 1½ cups almond flour
  • 1 scoop (30 g) vanilla or unflavored whey protein isolate
  • ½ cup chopped pecans
  • 4 oz cream cheese, softened
  • ¼ cup butter, softened
  • ⅓ cup powdered erythritol or monk fruit sweetener
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, beat cream cheese, butter, and sweetener until smooth.
  3. Add egg and vanilla, then mix well.
  4. Add almond flour, whey protein, baking powder, salt, and cinnamon.
  5. Fold in chopped pecans.
  6. Chill the dough for 20–30 minutes to make it easier to shape.
  7. Scoop dough into 12 balls and place on a lined baking tray.
  8. Flatten slightly with your hand.
  9. Bake for 12–15 minutes until edges are lightly golden.
  10. Cool completely before serving.
