Delicious Yeast Vegan Bread (Soft Homemade Loaf)

This is a classic soft yeast bread made without eggs or dairy. It bakes into a fluffy, slightly chewy loaf with a golden crust—perfect for sandwiches, toast, or dipping into soups.

Ingredients

Dry ingredients

  • 4 cups (500 g) all-purpose flour (plus extra for dusting)
  • 2¼ teaspoons (1 packet) instant yeast or active dry yeast
  • 2 tablespoons sugar (or maple syrup)
  • 1½ teaspoons salt

Wet ingredients

  • 1¼ cups (300 ml) warm water (about 110°F / 43°C)
  • 3 tablespoons olive oil or neutral vegetable oil

Optional (for softer texture)

  • 2 tablespoons plant milk (soy, oat, or almond)
  • 1 tablespoon vegan butter (melted), added after mixing

Instructions

Step 1: Activate the yeast (skip if using instant yeast)

  1. In a small bowl, mix warm water and sugar.
  2. Sprinkle yeast over the top.
  3. Let sit for 5–10 minutes until foamy.

If using instant yeast, you can mix it directly with dry ingredients.


Step 2: Make the dough

  1. In a large mixing bowl, combine:
    • Flour
    • Salt
    • Sugar
    • Yeast (if instant)
  2. Add:
    • Warm water (and activated yeast mixture if used separately)
    • Olive oil
  3. Mix until a rough dough forms.

Step 3: Knead the dough

  1. Transfer dough to a lightly floured surface.
  2. Knead for 8–10 minutes, until:
    • Smooth
    • Elastic
    • Slightly tacky but not sticky

Tip: If too sticky, add 1 tablespoon flour at a time.


Step 4: First rise

  1. Lightly oil a bowl.
  2. Place dough inside and cover with a damp towel or plastic wrap.
  3. Let rise in a warm place for 1–1.5 hours, until doubled in size.

Step 5: Shape the loaf

  1. Punch down the dough gently.
  2. Transfer to a floured surface.
  3. Shape into a loaf:
    • Flatten into a rectangle
    • Roll tightly into a log
    • Pinch seams closed
  4. Place into a greased 9×5 inch loaf pan.

Step 6: Second rise

  1. Cover loosely.
  2. Let rise for 30–45 minutes, until dough rises slightly above the pan.

Step 7: Bake

  1. Preheat oven to 375°F (190°C).
  2. Bake for 30–35 minutes, until:
    • Golden brown top
    • Hollow sound when tapped
    • Internal temperature ~190°F (88°C)

Step 8: Cool

  1. Remove from oven and let sit in pan for 10 minutes.
  2. Transfer to a wire rack.
  3. Cool completely before slicing (important for texture).

Optional Finishing Touch

For a soft, shiny crust:

  • Brush top with melted vegan butter right after baking.

Variations

1. Whole Wheat Version

Replace up to 50% of flour with whole wheat flour. Add 1–2 extra tablespoons water if needed.

2. Garlic Herb Bread

Add:

  • 1 teaspoon garlic powder
  • 1 tablespoon dried herbs (oregano, basil, thyme)

3. Sweet Soft Bread

Add:

  • ¼ cup sugar
  • 1 teaspoon vanilla extract
    Great for breakfast toast.

4. Seeded Bread

Sprinkle top with:

  • Sesame seeds
  • Sunflower seeds
  • Poppy seeds

Storage

  • Room temperature: 2–3 days (sealed bag or container)
  • Refrigerator: up to 5 days (slightly dries out faster)
  • Freezer: up to 2 months (slice before freezing for convenience)

Tips for Success

  • Water temperature is key: too hot kills yeast, too cold slows rising.
  • Kneading develops gluten—don’t rush this step.
  • Let the bread cool fully before slicing or it may feel gummy.
  • For extra softness, don’t overbake.
