Keto Cream Pudding Shots (Baileys/Kahlúa Style Base)

Keto Cream Pudding Shots (Baileys/Kahlúa Style Base)

This is a low-carb, creamy dessert mixture inspired by classic pudding shots made with pudding style textures, using heavy cream and almond milk for a rich, silky base. It’s typically chilled until thick and served in small cups.

The texture comes from whipping cream into the liquid base so it sets into a light mousse-like pudding. The flavor is usually enhanced with coffee liqueur or Irish cream, but those can be optional depending on dietary or preference needs.

Ingredients (Base Version)

  • 1 cup almond milk (unsweetened)
  • 1 cup heavy cream
  • 3 tbsp cold water
  • Sweetener to taste (erythritol, stevia, or monk fruit)
  • 1 tsp vanilla extract
  • Optional flavoring: coffee essence or cocoa powder

(Traditional versions often include Baileys Irish Cream and Kahlúa, but those are alcoholic and optional.)

Instructions

  1. In a bowl, mix almond milk, water, vanilla, and sweetener until combined.
  2. Slowly whisk in heavy cream.
  3. Chill the mixture for 10–15 minutes so it slightly thickens.
  4. Whip lightly (hand whisk or mixer) until it becomes slightly thicker and smooth.
  5. Pour into small cups or molds.
  6. Refrigerate for 2–4 hours until set to a pudding-like consistency.

Tips

  • Use very cold cream for better thickening.
  • Don’t overwhip or it can turn grainy.
  • Add cocoa powder for a mocha-style version.
  • If you want a stronger “coffee dessert” flavor, use instant coffee dissolved in a little hot water (then cooled).
  • Sweeten gradually—keto sweeteners vary in strength.
  • Chill longer for firmer “shot” texture.
  • Top with whipped cream or shaved chocolate before serving.
