Ingredients

Chocolate Base

  • 1 cup (240 g) natural creamy peanut butter (or almond butter)
  • ¼ cup (60 g) unsalted butter
  • ¼ cup (25 g) unsweetened cocoa powder
  • ⅓ cup (65 g) powdered monk fruit or erythritol sweetener
  • 1 tsp vanilla extract
  • Pinch of salt

High-Protein Crunch

  • 1½ cups (90 g) high-protein crispy cereal (such as catalina-style keto cereal) or crushed protein crisps
  • 1 scoop (30 g) chocolate whey protein isolate
  • 2 tbsp chia seeds
  • 2 tbsp hemp hearts

Optional Holiday Mix-Ins

  • 2 tbsp sugar-free white chocolate chips
  • 2 tbsp sugar-free dark chocolate chips
  • Red and green sugar-free sprinkles
  • Unsweetened shredded coconut

Instructions

  1. Line a tray or plate with parchment paper.
  2. In a microwave-safe bowl (or saucepan over low heat), melt together the peanut butter and butter until smooth.
  3. Stir in the cocoa powder, sweetener, vanilla, and salt until fully combined.
  4. Let the mixture cool for 1–2 minutes, then whisk in the chocolate whey protein isolate until smooth.
  5. Fold in the crispy cereal, chia seeds, hemp hearts, and any optional mix-ins until evenly coated.
  6. Scoop about 2 tablespoons of the mixture onto the prepared tray, shaping each into a cookie.
  7. Decorate with a few extra chocolate chips or sugar-free sprinkles if desired.
  8. Refrigerate for 30 minutes, or until firm.
