No kneading, no eggs, no butter — Homemade muffins

Ingredients

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk (or plant-based milk)
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup raisins, chocolate chips, or chopped fruit (optional)

Instructions

1. Prepare the Muffin Batter

  1. Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
  2. In a large bowl, mix flour, sugar, baking powder, and salt.
  3. Add milk, vegetable oil, and vanilla extract.
  4. Stir gently until just combined. Do not overmix; a few small lumps are fine.
  5. Fold in raisins, chocolate chips, or fruit if using.

2. Prepare for Air Frying

  1. Lightly grease silicone muffin cups or small oven-safe muffin molds.
  2. Fill each cup about ¾ full with batter.
  3. Place the muffin cups in the air fryer basket.

3. Air Fry the Muffins

  1. Air fry at 320°F (160°C) for 12–16 minutes.
  2. Check by inserting a toothpick into the center; it should come out clean.
  3. If needed, cook for another 1–2 minutes.

4. Serve

  1. Let the muffins cool for 5 minutes before removing from the molds.
  2. Serve warm with tea, coffee, jam, or honey.

  • Air Fry Time: 12–16 minutes
  • Total Time: 22–26 minutes
