Ingredients
- 1½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup milk (or plant-based milk)
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ cup raisins, chocolate chips, or chopped fruit (optional)
Instructions
1. Prepare the Muffin Batter
- Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
- In a large bowl, mix flour, sugar, baking powder, and salt.
- Add milk, vegetable oil, and vanilla extract.
- Stir gently until just combined. Do not overmix; a few small lumps are fine.
- Fold in raisins, chocolate chips, or fruit if using.
2. Prepare for Air Frying
- Lightly grease silicone muffin cups or small oven-safe muffin molds.
- Fill each cup about ¾ full with batter.
- Place the muffin cups in the air fryer basket.
3. Air Fry the Muffins
- Air fry at 320°F (160°C) for 12–16 minutes.
- Check by inserting a toothpick into the center; it should come out clean.
- If needed, cook for another 1–2 minutes.
4. Serve
- Let the muffins cool for 5 minutes before removing from the molds.
- Serve warm with tea, coffee, jam, or honey.
