Cheesecake Filling
- 8 oz (225 g) cream cheese, softened
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
Strawberry Filling
- ¾ cup strawberry jam or preserves
- 1 cup finely diced fresh strawberries
- 1 teaspoon cornstarch (optional, helps thicken juicy berries)
Cinnamon Sugar
- ¼ cup unsalted butter, softened
- ⅓ cup brown sugar
- 1 tablespoon ground cinnamon
Strawberry Cream Cheese Frosting
- 4 oz (115 g) cream cheese, softened
- 2 tablespoons unsalted butter, softened
- 1½ cups powdered sugar
- 2 tablespoons strawberry jam
- ½ teaspoon vanilla extract
- 1–2 tablespoons milk (if needed)
Instructions
1. Make the Dough
- Combine warm milk, yeast, and sugar in a large bowl. Let sit for 5–10 minutes until foamy.
- Mix in eggs and melted butter.
- Add flour and salt, mixing until a soft dough forms.
- Knead for 8–10 minutes until smooth and elastic.
- Place in a greased bowl, cover, and let rise for 1–1½ hours or until doubled.
2. Prepare the Fillings
- Beat cream cheese, sugar, and vanilla until smooth.
- Mix brown sugar and cinnamon in a small bowl.
3. Assemble the Rolls
- Roll dough into a 16×12-inch rectangle.
- Spread softened butter evenly over the dough.
- Sprinkle with the cinnamon sugar mixture.
- Spread the cheesecake filling in a thin layer.
- Spoon strawberry jam over the top.
- Scatter diced strawberries evenly.
4. Roll & Rise
- Roll tightly from the long edge.
- Slice into 12 equal rolls.
- Arrange in a greased 9×13-inch baking dish.
- Cover and let rise for 30–45 minutes.
5. Bake
- Preheat oven to 350°F (175°C).
- Bake for 25–30 minutes, until golden brown and the centers are cooked through.
- Cool for about 10 minutes.
6. Make the Frosting
- Beat cream cheese and butter until fluffy.
- Mix in powdered sugar, strawberry jam, and vanilla.
- Add milk if needed for a spreadable consistency.
7. Frost & Serve
Spread the frosting over the warm rolls and garnish with sliced fresh strawberries if desired.
Tips
- Pat fresh strawberries dry to prevent excess moisture.
- For extra strawberry flavor, swirl a little additional jam into the frosting.
- Refrigerate leftovers in an airtight container for up to 4 days. Reheat individual rolls in the microwave for 15–20 seconds before serving.
- These rolls can be assembled the night before and refrigerated overnight. Let them sit at room temperature for 30–45 minutes before baking.
