Instructions

  1. Warm the Tortillas: Heat a dry skillet over medium heat. Warm each tortilla for 15–20 seconds per side until pliable and soft. Stack them under a damp paper towel or plastic wrap to keep them from drying out.
  2. Spread & Roll: Unwrap the softened Babybel Mini Light cheeses. Spread one cheese evenly across the surface of each tortilla. Tightly roll each tortilla into a snug log, then slice each log into 6 pinwheels.
  3. Crisp in the Pan: Return your skillet to medium heat and spray liberally with nonstick cooking spray. Place the roll-up pieces in the pan and sauté for 2–3 minutes, turning frequently until all sides are light golden brown and the cheese inside is warm and gooey.
  4. Sweet Coat & Serve: Remove the hot roll-ups from the skillet and immediately toss or cover them generously with Swerve Brown Sugar (and optional cinnamon) while still warm so the coating adheres. Serve immediately!
