Ingredients
- 1 cup (225 g) full-fat cottage cheese
- 1 scoop (30 g) chocolate whey protein isolate
- ½ cup (50 g) almond flour
- 2 tbsp unsweetened cocoa powder
- 2 tbsp powdered peanut butter (optional, for extra protein)
- 2 tbsp granulated monk fruit or erythritol sweetener (adjust to taste)
- 1 tsp vanilla extract
- Pinch of salt
- 2 tbsp sugar-free chocolate chips, finely chopped
- 1–2 tbsp unsweetened almond milk (only if needed)
Optional Coating
- Unsweetened cocoa powder
- Finely chopped roasted almonds or pecans
- Unsweetened shredded coconut
Instructions
- Blend the cottage cheese in a food processor or blender until completely smooth.
- Add the chocolate protein powder, almond flour, cocoa powder, powdered peanut butter, sweetener, vanilla, and salt. Blend until a thick brownie batter forms.
- If the mixture is too thick, add almond milk 1 tablespoon at a time until it reaches a scoopable consistency.
- Fold in the chopped sugar-free chocolate chips.
- Refrigerate the mixture for 20–30 minutes to firm up.
- Scoop about 1 tablespoon of the mixture and roll into balls.
- Roll in cocoa powder, chopped nuts, or shredded coconut if desired.
- Store in an airtight container in the refrigerator.
