Ingredients (9)

  • 1 (3.4 oz/96 g) package sugar-free instant pistachio pudding mix
  • 1 cup low-fat cottage cheese
  • 1 cup plain nonfat Greek yogurt
  • 1 (8 oz/225 g) container light whipped topping, thawed
  • 1 cup crushed pineapple in juice, well drained
  • 1 cup mandarin orange segments, well drained
  • ½ cup mini marshmallows (optional)
  • ¼ cup chopped pistachios
  • 1 tsp vanilla extract

Instructions

  1. Blend the cottage cheese until smooth.
  2. In a large bowl, whisk together the blended cottage cheese, Greek yogurt, pistachio pudding mix, and vanilla until thick and creamy.
  3. Fold in the whipped topping.
  4. Gently stir in the pineapple, mandarin oranges, marshmallows (if using), and chopped pistachios.
  5. Cover and refrigerate for at least 1 hour before serving.

To Make It Lower Carb

  • Omit the mini marshmallows.
  • Use only ½ cup pineapple and ½ cup mandarin oranges, or replace part of the fruit with diced strawberries.
  • Choose a sugar-free whipped topping if available.

For Even More Protein

Mix in:

  • 1 scoop vanilla protein powder, or
  • An extra ½ cup Greek yogurt.

This dessert is creamy, fluffy, and reminiscent of the classic pistachio fluff while providing significantly more protein and less sugar.
