Ingredients (9)
- 1 (3.4 oz/96 g) package sugar-free instant pistachio pudding mix
- 1 cup low-fat cottage cheese
- 1 cup plain nonfat Greek yogurt
- 1 (8 oz/225 g) container light whipped topping, thawed
- 1 cup crushed pineapple in juice, well drained
- 1 cup mandarin orange segments, well drained
- ½ cup mini marshmallows (optional)
- ¼ cup chopped pistachios
- 1 tsp vanilla extract
Instructions
- Blend the cottage cheese until smooth.
- In a large bowl, whisk together the blended cottage cheese, Greek yogurt, pistachio pudding mix, and vanilla until thick and creamy.
- Fold in the whipped topping.
- Gently stir in the pineapple, mandarin oranges, marshmallows (if using), and chopped pistachios.
- Cover and refrigerate for at least 1 hour before serving.
To Make It Lower Carb
- Omit the mini marshmallows.
- Use only ½ cup pineapple and ½ cup mandarin oranges, or replace part of the fruit with diced strawberries.
- Choose a sugar-free whipped topping if available.
For Even More Protein
Mix in:
- 1 scoop vanilla protein powder, or
- An extra ½ cup Greek yogurt.
