Fried Alligator

Ingredients

  • 1 pound alligator meat, cut into bite-size pieces
  • 1 cup buttermilk
  • 1 tablespoon hot sauce (optional)
  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon Cajun seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil (for coating)
  • Cooking spray

Instructions

1. Marinate the Alligator

  1. Place the alligator pieces in a bowl with buttermilk and hot sauce.
  2. Cover and refrigerate for 1–2 hours to tenderize the meat and add flavor.
  3. Drain the alligator and lightly pat dry.

2. Prepare the Coating

  1. In a bowl, combine flour, cornmeal, paprika, garlic powder, onion powder, Cajun seasoning, salt, and black pepper.
  2. Toss the alligator pieces in the seasoned flour mixture until evenly coated.
  3. Lightly spray or drizzle with olive oil to help the coating crisp in the air fryer.

3. Air Fry the Alligator

  1. Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
  2. Spray the air fryer basket with cooking spray.
  3. Arrange the coated alligator pieces in a single layer, leaving space between pieces.
  4. Air fry for 8–12 minutes, flipping halfway through.
  5. Cook until the coating is golden and crispy and the internal temperature reaches 160°F (71°C).

4. Serve

  1. Let the fried alligator rest for 2–3 minutes.
  2. Serve with lemon wedges, spicy mayo, ranch, or your favorite dipping sauce.
