- 1 pound alligator meat, cut into bite-size pieces
- 1 cup buttermilk
- 1 tablespoon hot sauce (optional)

- ½ cup cornmeal
- 1 teaspoon paprika

Instructions
1. Marinate the Alligator
- Place the alligator pieces in a bowl with buttermilk and hot sauce.
- Cover and refrigerate for 1–2 hours to tenderize the meat and add flavor.
- Drain the alligator and lightly pat dry.
2. Prepare the Coating
- In a bowl, combine flour, cornmeal, paprika, garlic powder, onion powder, Cajun seasoning, salt, and black pepper.
- Toss the alligator pieces in the seasoned flour mixture until evenly coated.
- Lightly spray or drizzle with olive oil to help the coating crisp in the air fryer.
3. Air Fry the Alligator
- Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
- Spray the air fryer basket with cooking spray.
- Arrange the coated alligator pieces in a single layer, leaving space between pieces.
- Air fry for 8–12 minutes, flipping halfway through.
- Cook until the coating is golden and crispy and the internal temperature reaches 160°F (71°C).
4. Serve
- Let the fried alligator rest for 2–3 minutes.
- Serve with lemon wedges, spicy mayo, ranch, or your favorite dipping sauce.
