Creamy Chicken Mushroom Wild Rice Soup

Ingredients

For the Soup:

  • 1 cup uncooked wild rice (or wild rice blend), rinsed
  • 1 lb (450g) chicken breast, diced into bite-sized pieces
  • 2 cups (200g) fresh mushrooms (cremini or button), sliced
  • 2 tbsp olive oil or butter
  • 1 medium yellow onion, diced
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp Italian seasoning (or fresh thyme and rosemary)
  • Salt and fresh black pepper, to taste

For the Creamy Base:

  • ¼ cup unsalted butter
  • ¼ cup all-purpose flour
  • 1 cup heavy cream (or whole milk)
  • 2 tbsp fresh parsley, finely chopped (for garnish)

Instructions

1. Cook the Base & Vegetables

  1. Heat the olive oil (or butter) in a large Dutch oven or soup pot over medium heat.
  2. Add the diced onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Add the sliced mushrooms and minced garlic. Sauté for another 4–5 minutes until the mushrooms brown and release their moisture.

2. Simmer the Soup

  1. Add the diced chicken breast, rinsed wild rice, Italian seasoning, salt, and pepper into the pot.
  2. Pour in the chicken broth and stir well to combine.
  3. Bring the mixture to a boil, then reduce the heat to low, cover with a lid, and let it simmer gently for 35–40 minutes (until the wild rice is tender and chewy).

3. Make the Cream Roux

  1. About 10 minutes before the soup is done, melt ¼ cup of butter in a separate small saucepan over medium heat.
  2. Whisk in the ¼ cup of flour and cook for 1–2 minutes until bubbly and golden.
  3. Slowly pour in the heavy cream while whisking continuously until smooth and thickened.

4. Combine & Serve

  1. Whisk the creamy roux mixture directly into the simmering soup pot.
  2. Stir well and let the soup simmer uncovered for an additional 3–5 minutes until thickened and rich.
  3. Season with additional salt and pepper if needed.
  4. Garnish with fresh chopped parsley and serve warm!
