Cajun Chicken Alfredo with Zucchini Noodles

Ingredients

Chicken

  • 1 lb (450 g) chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1½ teaspoons Cajun seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Alfredo Sauce

  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons cream cheese
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Zucchini Noodles

  • 3 medium zucchini, spiralized
  • 1 teaspoon olive oil
  • ¼ teaspoon salt

Instructions

  1. Put the chicken pieces in a bowl. Add olive oil, Cajun seasoning, garlic powder, black pepper, and salt. Mix well.
  2. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  3. Place the chicken in the air fryer basket in a single layer.
  4. Air fry at 400°F (200°C) for 10–12 minutes, shaking halfway through.
  5. Make sure the chicken reaches 165°F (74°C) inside.
  6. While the chicken cooks, heat the heavy cream in a small saucepan over low heat.
  7. Add cream cheese and stir until smooth.
  8. Add Parmesan, garlic powder, and black pepper. Stir until the sauce becomes creamy. Do not boil.
  9. Toss the zucchini noodles with 1 teaspoon olive oil and a little salt.
  10. Add the zucchini noodles to the air fryer basket and cook at 375°F (190°C) for 3–4 minutes. Do not overcook, or they may become watery.
  11. Toss the zucchini noodles with the Alfredo sauce.
  12. Top with the Cajun chicken and serve hot.

High-Protein Tip

For even more protein, add ½ cup cooked shrimp to the dish or use extra chicken breast.
