Chocolate Brownie Oatmeal

This breakfast tastes like a warm brownie while providing plenty of protein and fiber.

Ingredients

  • ½ cup (40 g) rolled oats
  • 1 cup (240 ml) unsweetened almond milk (or milk of choice)
  • 1 scoop (30 g) chocolate whey protein isolate
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp chia seeds (optional, for extra fiber)
  • 1 tbsp powdered peanut butter (optional)
  • 1–2 tbsp granulated monk fruit or erythritol, to taste
  • ½ tsp vanilla extract
  • Pinch of salt

Optional Toppings

  • 1 tbsp sugar-free chocolate chips
  • 1 tbsp chopped walnuts or pecans
  • 1 tbsp natural peanut butter or almond butter
  • A sprinkle of cacao nibs

Instructions

  1. In a saucepan, combine the oats, almond milk, cocoa powder, chia seeds (if using), and salt.
  2. Cook over medium heat for 4–5 minutes, stirring occasionally, until the oats are creamy.
  3. Remove from the heat and let cool for about 1 minute.
  4. Stir in the protein powder, sweetener, vanilla, and powdered peanut butter. If it’s too thick, add a splash of almond milk.
  5. Top with sugar-free chocolate chips, nuts, or nut butter and serve warm.
