Servings: 2 large glasses
Prep Time: 15 minutes
Chill Time: 20–30 minutes (optional)

🛒 Ingredients

For the Strawberry Base

  • 250 g fresh strawberries, hulled and sliced
  • 2 tbsp sugar, honey, or maple syrup (adjust to taste)
  • 1 tsp lemon juice
  • ¼ tsp vanilla extract

For the Milk Layer

  • 2 cups cold milk (dairy or plant-based)
  • 2–3 tbsp sweetened condensed milk (optional, for extra richness)
  • ½ tsp vanilla extract

For the Velvet Cream Topping

  • ½ cup heavy cream (or chilled coconut cream for dairy-free)
  • 1 tbsp powdered sugar
  • ¼ tsp vanilla extract

Optional Garnishes

  • Fresh strawberry slices
  • Freeze-dried strawberry powder
  • White chocolate shavings
  • Mint leaves

👩‍🍳 Step 1: Prepare the Strawberry Compote

Place in a small saucepan:

  • sliced strawberries
  • sugar
  • lemon juice

Cook over medium heat for 5–7 minutes.

Stir occasionally as the strawberries soften and release their juices.

Texture Goal

You want a thick, spoonable strawberry sauce with small fruit pieces remaining.

Remove from heat.

Stir in vanilla extract.

Allow to cool completely.

🍓 Step 2: Blend the Strawberry Mixture

Transfer the cooled strawberries to a blender.

Blend until smooth.

For an ultra-silky drink:

  • strain through a fine-mesh sieve

This removes seeds and creates a velvety texture.

Place in the refrigerator to chill.

🥛 Step 3: Prepare the Milk Mixture

In a pitcher combine:

  • cold milk
  • condensed milk (if using)
  • vanilla extract

Whisk until fully mixed.

Taste and adjust sweetness if desired.

☁️ Step 4: Make the Velvet Cream

In a chilled bowl add:

  • heavy cream
  • powdered sugar
  • vanilla extract

Whip using a hand mixer until soft peaks form.

Important

Do not overwhip.

The cream should be:

  • light
  • silky
  • pourable
  • similar to melted ice cream consistency

🧊 Step 5: Assemble the Drink

Fill two tall glasses with ice cubes if desired.

Add:

  • 2–3 tablespoons strawberry puree to the bottom of each glass

Slowly pour in the milk mixture.

For a layered look:

  • pour milk over the back of a spoon

This helps keep the strawberry layer separate initially.

☁️ Step 6: Add the Velvet Layer

Spoon or gently pour the whipped cream mixture on top.

The cream should float and create a beautiful velvety cap.

🍓 Step 7: Garnish

Top with:

  • fresh strawberry slices
  • strawberry powder
  • white chocolate shavings
  • mint leaves

🍽️ How to Serve

Serve immediately with:

  • a straw for mixing
  • a long spoon

Some people enjoy stirring everything together, while others sip through the layers.
