Bread
- 1½ cups (150 g) shredded mozzarella cheese
- 2 oz (56 g) cream cheese
- 1 cup (100 g) almond flour
- ½ cup (50 g) unflavored whey protein isolate
- 1 tsp baking powder
- 1 large egg
Garlic Butter Topping
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp chopped fresh parsley
- ¼ cup (25 g) grated Parmesan cheese
- ½ tsp Italian seasoning (optional)
- Pinch of salt
Instructions
- Preheat your oven to 375°F (190°C). Line a baking tray or 8-inch square pan with parchment paper.
- Microwave the mozzarella and cream cheese together for 60–90 seconds, stirring halfway, until smooth.
- Stir in the egg.
- Add the almond flour, whey protein isolate, and baking powder. Mix until a soft dough forms.
- Press the dough into a rectangle about ½ inch (1.25 cm) thick.
- Bake for 15 minutes, or until lightly golden.
- While the bread bakes, combine the melted butter, garlic, parsley, Parmesan, Italian seasoning, and salt.
- Remove the bread from the oven and brush generously with the garlic butter mixture.
- Return to the oven for 5 more minutes, until the edges are golden and the topping is bubbling.
- Let cool for 5 minutes before slicing into 8 pieces.
