Low-Carb Philly Cheesesteak Casserole

Ingredients

  • 2 lbs (900 g) lean ground beef or thinly sliced sirloin steak
  • 2 tbsp olive oil or butter
  • 1 large onion, sliced (optional for lower carb: use less)
  • 1 green bell pepper, sliced
  • 8 oz mushrooms, sliced
  • 8 oz cream cheese, softened
  • 1 cup Greek yogurt (for extra protein and creaminess)
  • 2 cups shredded provolone or mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat oil in a large pan. Cook the steak or ground beef until browned.
  3. Add onion, bell pepper, mushrooms, and garlic. Cook until vegetables are soft.
  4. Season with salt, pepper, and Italian seasoning.
  5. Mix cream cheese and Greek yogurt until smooth.
  6. Combine the beef mixture with the cream cheese mixture.
  7. Transfer to a baking dish and top with provolone and cheddar cheese.
  8. Bake for 20–25 minutes until bubbly and golden.
  9. Rest for 5 minutes before serving.
